Biko: A Filipino Delicacy

What is Biko?

Biko is a traditional Filipino rice cake made from glutinous rice, coconut milk, and brown sugar. It is often topped with caramelized coconut and is a popular dessert during the Christmas season.

Ingredients

To make biko, you will need the following ingredients:

  • 1 cup glutinous rice
  • 1 can coconut milk
  • 1/2 cup brown sugar
  • 1/4 cup caramelized coconut

Instructions

To make biko, follow these instructions:

  1. Rinse the glutinous rice and soak it in water for at least 4 hours.
  2. Drain the rice and place it in a pot with the coconut milk and brown sugar.
  3. Bring to a boil, then reduce heat to low and simmer for 30 minutes, or until the rice is cooked through.
  4. Spread the rice mixture into a greased 9x13 inch baking dish.
  5. Top with the caramelized coconut.
  6. Bake at 350 degrees Fahrenheit for 15 minutes, or until the top is golden brown.

Serving

Biko can be served warm or cold. It is often served with a side of fruit or ice cream.
